I was worried a seven-inch blade would feel small, but the Santoku's height gives it amazing knuckle clearance for chopping. The edge came razor-sharp out of the box and glides through tomatoes without any squishing. It's quickly become my go-to for everything from dicing onions to mincing garlic.
The layered pattern on the blade is stunning in the light, and it slices through tomatoes like butter with no effort at all. Getting it from Seki, Japan, gives me confidence in the craftsmanship.
I've been using this knife for a week now and it glides through onions like they're butter. The blade feels incredibly balanced in my hand, making prep work noticeably faster. It's held its edge perfectly so far, which is exactly what I hoped for.
